Executive Chef Kristine Subido

A member of the WAVE team since its opening, newly appointed Executive Chef Kristine Subido has served as both Banquet Chef and Executive Sous Chef at the Mediterranean restaurant located in the W Chicago – Lakeshore. Subido, who has worked with Mediterranean cuisine throughout her professional career, is looking forward to continuing the restaurant’s whimsical approach to this flavorful cuisine, played out in small plates bursting with sun-filled flavors.

Prior to working at WAVE, Kristine was Chef du Cuisine at Mossant Bistro, where she worked under Chef Steve Chiapetti, her longtime mentor. Kristine’s tenure with Chiapetti began at Mango restaurant in 1994, where she worked as a line cook before being promoted to Sous Chef. Kristine was his sole assistant, 1995 and 1997, during his two bids to win the international Bocuse d’Or, she was part of the team that earned a 7th place finish at the Lyon, France competition. “The whole experience was a bit like a soccer match, complete with big screen televisions, screaming and an enthralled audience. We were creating a precise art form in the style of an athletic event and you needed the endurance, focus and determination of an athlete to get through the competition” she said.

After Mango, Kristine joined Chef Chiapetti as Chef du Cuisine to open Grapes restaurant in Chicago’s River North. She also worked at Le Sud in Lyon, one of Paul Bocuse’s restaurant Northern African, Tunisian and Moroccan-style cuisine. Kristine is a graduate of the Culinary School at Kendall College.
